Try to find a place that's flexible about this. - If you're having the writing done for you, can you pay in installments, to be sure you're getting the work you paid for before paying the entire amount? Most reputable places will ask for partial payment up front, then additional portions to be paid as work is completed.
Be wary of any place that asks for too much money before offering their services. You may get burned. Once you've chosen your help writing a book, try to make a calendar of deadlines to be sure the project moves forward at a reasonable pace.
